#101: Tomato Walnut Crusted Fried ‘Chicken’
Oh, I loved this one! For the first, I made the seitan the way I'm used to: substituting a third of the gluten flour with quinoa (or chickpea) flour and adding the spices into the flour mixture (paprika, curry, vegetable stock powder, garlic powder, onion powder...) and adding some water, soy sauce, (sesame) oil, balsamico. And then boiling the seitan chunks in vegetable stock.
Also the marinade was wonderfull! I made a double batch of seitan and after marinating the first half in the tomato sauce, I left the other half to marinade over night and next day we ate the whole thing as a wheat balls in tomato sauce -sort of a thing. Even my household, who is very suspicious in this stuff really liked it.

This was probably one of the oddest recipes and the most suprisingly tasty results! I made only a halved portion. What's with all this baking!? Oh lordy!

#93: Pumpkin Tofu Cheesecake
This receipe was a huge bottleneck. I had trouble finding the pumpkin puree, Behnford's didn't have any and I couldn't find it anywhere else - fresh or canned. So I substituted the pumpkin with sweet potato... and it worked out great! Also I forgot to buy the firm tofu at the supermarket so I used drained soy yogurt instead. We're eating it tomorrow at christmas dinner, but I had a little taste (to be safe:)) of it and it was wonderfull.
PS. What a great crust! I made the cookies myself, veganizing this recipe.

#92: Nana’s Pesto Pinwheel Rolls
Because I have made this receipe many times before, I wanted to try something new with it. So instead of the basil pesto I used this cheapo brand's new vegan red chili pesto. Turned out great!
Also I'd like to add my own addition to this receipe. Once I wanted to make these rolls but didn't have the ingredients so instead of using pesto I mixed about 1 cup of natural soy yoghurt (15 min of draining first) and 2-3 tbs of curry paste. It was great! I have served those Yoghurt Curry Rolls a few times at partys and had none left in the morning!

Perfect day for making Gingerbread cookies: it's our Independence Day and today we got our first snow in Helsinki.
I switched allspice into cardamom, but these still tasted a little odd: something missing that I'm used to.

#87: Cold Coconut Curried Noodle Salad
Um okay not a triumhp this one. I didn't get the sauce to firm up, there was a lot of it! Even after boiling the time it was supposed to and more. Then I thought ok, maybe it will happen over night, coconut tends to harden up in the fridge and so on. Well, it didn't happen, no change. So, I gave up and took the thing with me to work as a lunch soup, and it worked up really well!

A bit of a blah salad, at least mine was. Changed kidney beans to white beans, mayonaise to plain soy yoghurt and green bell peppers to red peppers.

This was odd and fun! I've heard the name of this dish, but never seen or tasted it. I used muscovado sugar and dark cane suryp, it tasted really really good and not too sugary.

The mixture felt a bit too dry before baking and so it was. I could've added some yoghurt or cream into it, but I didn't.. The taste was OK, but maybe it would have been nicer with some sauce. It's been a long time I had this type of a meal!

Reading the name of the dish and scrolling the ingredients list, I knew this was going to be good. But how good - oh lordy! I blended the soup for an extra long time and the result was so light and smooth that it almost sort of melted in my mouth.

I haven't been a fan of the faux meat receipes in this book. They're somehow too strong tasting and too chewy. And this one was no exception..
The cranberry sauce was really nice! First time making it, or even tasting it, I think. For me, after cooled down it tasted excactly like lingonberry jam.

I don't know what to think about this receipe. It was OK, but still a little weird.
I've been doing a lot of skipping over all the really expensive and hard-to-find ingredients, but this time I thought I really needed to do the whole receipe. So, I went to this store that sells imported foods here in Helsinki, Behnfords, and got some pumpkin puree.

#76: Sharon’s Black Pepper Coffee Cake
I added spelt flour and stuff like muscovado sugar into it and I think it make the cake a little more fragile in the texture.. The taste was really nice and really light!

Oh shoot! I've been wondering where the cumin fried potatoes entry went and realized that I haven't posted it yet and that the receipe and a few others have been deleted by mistake from my schedule.doc - four lines missing! What happened?! Oh well, I'm gonna post them now. This so messes up my list, d'oh!

#71: Baked Chili w/Cornbread Biscuit Topping
This dish turned out surprisingly tasty! I've wanted to try cocoa in a savory dish ever since I saw Chocolat.
So, I know that you could find cornmeal in the ethnic food stores here, but I wanted to use this old polenta I've had in the cubbard for way too long. So I just boiled the polenta and added some chili powder, olive oil and paprika powder. Also I wanted to use an opened tube of tomato paste, so I used that, some crushed tomatoes and one fresh cubed tomato.
After doing the polenta, the chili and getting everything into the baking dish I was very excited to learn that the big dish wouldn't fit into my microwave-size play oven. So.. I ended up baking the dish with the oven door a little open, because the temperature stayed enough high to cook it.. Oh dear!

#69: Cinnamon-Spiced Roasted Veggies w/Couscous
Tasty! Instead of the butternut squash I used carrots. Had this for lunch yesterday, but changed the couscous with millet.
