#172: Sesame Roasted Asparagus

So, after a loooong break, I'm back!

And with the most delicious recipe. I've made this about 5 times after trying it the first time.

#138: Eggplant Parmesan & All Purpose Garlic Tomato Sauce

This dish was so good that I remembered taking the photo a bit too late!



I've done something similar to this dish with a few alterations: adding chili into the tomato sauce, leaving out the flouring the eggplant and adding a lot of cardemom and cinnamon. Yum!

This dish was the best! My boyfriend was licking the serving dish and asking "What was this and how did you make it !?!" And so easy to make and everything. Oh dear!

#101: Tomato Walnut Crusted Fried ‘Chicken’

Oh, I loved this one! For the first, I made the seitan the way I'm used to: substituting a third of the gluten flour with quinoa (or chickpea) flour and adding the spices into the flour mixture (paprika, curry, vegetable stock powder, garlic powder, onion powder...) and adding some water, soy sauce, (sesame) oil, balsamico. And then boiling the seitan chunks in vegetable stock.

Also the marinade was wonderfull! I made a double batch of seitan and after marinating the first half in the tomato sauce, I left the other half to marinade over night and next day we ate the whole thing as a wheat balls in tomato sauce -sort of a thing. Even my household, who is very suspicious in this stuff really liked it.

#92: Nana’s Pesto Pinwheel Rolls



 Because I have made this receipe many times before, I wanted to try something new with it. So instead of the basil pesto I used this cheapo brand's new vegan red chili pesto. Turned out great!

Also I'd like to add my own addition to this receipe. Once I wanted to make these rolls but didn't have the ingredients so instead of using pesto I mixed about 1 cup of natural soy yoghurt (15 min of draining first) and 2-3 tbs of curry paste. It was great! I have served those Yoghurt Curry Rolls a few times at partys and had none left in the morning!

#82: Roasted Carrot Coconut Soup




Reading the name of the dish and scrolling the ingredients list, I knew this was going to be good. But how good - oh lordy! I blended the soup for an extra long time and the result was so light and smooth that it almost sort of  melted in my mouth.

#58: Matthew’s Spicy Tomato Peanut & Kale Pasta

Like Sarah in the foreword of the receipe, I had doubts about this dish. But also I was positively surprised! Superb! Served this with carrot tagliatelle.

#54: Maury’s Roasted Root Soup


Couldn't find any yams, so I used sweet potato instead. Looking at the receipe, I was thinkin that finely minced garlic would propably burn after baking for that long. So I grilled the garlic gloves whole, with skins on. Then the inside of the glove goes all soft and its easy to just press the insides out. Doing this makes the garlic taste really different: soft, aromatic and delicious - I love it!

This soup was just wonderful. It got two thumbs up from our household!

#48: Sesame Bread Sticks

Delicious!

The name of the dish already sounded delicious and the result was too! Onion powder, garlic powder and the nutritional yeast just works! To increase the fibre level I added some rye bran.

#46: Coconut Curried Veggies


 I made this for dinner one night, just picked one easy receipe that I almost had the ingredients to. And I wasn't too excited about it but it turned out really delish! I wanted to use stuff from my fridge, so didn't have to throw them out. Instead of kidney beans and red bell peppers I used chickpeas, cauliflower and cut green beans.

#42: Spaghetti and Tofu Balls




This was my first succesfull attempt to make Tofu balls. The texture and taste was just perfect! Knowing myself I doubled The Tofu ball part of the receipe..

#41: Wolffie’s Chocolatey Moist Brownies and “Butter Cream” Frosting

These brownies were the best! The Frosting I actually made for The Flax Brownies, not these. I halved the receipe and found the measuring bit difficult - like taking half of 1/4 cup of something. So it was really good, but I think it could be even better!

#19: Raspberry Walnut Pancakes

I love pancakes! Is it really ok to eat these for breakfast?!

First time I have even tasted American Style Pancakes was when I made them myself. In Finland we don't have a this type of a dish. We have these thin crispy small/big crepe type pancakes 'lettu' (yum!) and a thick oven-baked kind 'pannukakku' (..cake batter gone bad? yuck!) and their not something we would eat on breakfast. And neither usually contains any berries or fruit. I would eat lettu's with sugar and margarine or jam. Pannukakku's.. I would'nt eat but they are often served with jam and whipped cream.

Wikipedia says: "Finnish pancakes greatly resemble (swedish) "Plättar" and are called "Lettu", "Lätty", "Räiskäle" or "Ohukainen". In Finland pancakes are usually eaten as dessert with whipped cream and/or pancake-jam, sugar or vanilla ice-cream. In Finnish, "Lettu" and "Pannukakku" (literally "Pancake") have different meanings, the latter having structurally closer resemblance to hotcake, and baked in an oven instead of using a frying pan."

This is propably the best pancake receipe I've tried! The raspberries gives such a freshness to it. In these pancakes, I used frozen raspberries, they worked just fine.



 Because I don't own a pancake griddle (is that the right word?), I used cooking rings. The inside of the rings were lightly oiled and placed on my heavy cast iron pan. When the pancakes were flipped around, the rings were easy to remove.

#11: Karen’s Mexican Burrito Pie

Doing this dish is something that I've really waited for! And man was it good! The whole idea is sort of genius. It was quick to bake and it tasted fresh, cheesy and spicy. YUM!

#9: Noodle Salad with Spicy Nut Dressing


How often do you have at home all the incredients to a dish ready? Although I substituted the choy with thinly sliced broccoli. It was delish!

#7: Blueberry Dilip

Vegan Culinary Institute's La Dolce Vegan Challenge continues!

Oh God I loved this one! Here in Finland were obsessed with blueberries and all other berries! So an easy Blueberry pie type receipe is always welcome. I made only ½ portion of the receipe, because I'm the only one eating desserts in this household..


Yum!
