#6: Simple Leek and Potato Soup

All is said in the title.




 Instead of two medium size leeks, I used one huge leek. Also I like to use the whole leek, dark green parts included. Added also some oat cream.

  1. Wow! Nikki you are just flying through the recipes! I like the whole leek too. Your soup looks really good. I also have a question. I am writing a vegan cookbook and would be very interested in having a European opinion on the recipes. Would you be interested in testing some of them? We wouldn't need to start for a couple of months. Let me know.

    Yeah well, this brisk pace is probably gonna die down soon enough :-] And I think I forgot to mention that I also do this for a living..

    I'd love to try out your recipes! Although I think we might not have the same stuff here compared to the rest of Europe. But if you think it will help, I'll gladly do it.

  3. Actually the fact that you have some different ingredients would help tremendously because I could then allow for differences and make suggestions. For instance you have been using oat cream in your recipes but I don't know if we have that here. If we do, I've not seen it and would love to try it. So I will keep a lookout for it. Thanks. I will let you know when I have enough of the recipes together to give you a batch.

    oat cream is actually the best vegan cream i have ever used. finnish keiju oat cream is the best! it's much 'creamier' than for an example alpro soya cream. sorry to tease you ;-]
